Baingan bharta Recipe

Baingan Bharta is a rich Indian curry which is made with char-grilled aubergines. Aubergines are known as Baingan in North India. They are more commonly known as big eggplants.

I have grilled aubergine directly on my gas stove. The specialty if this curry is the flavor from mustard oil and char grilled aubergines. So, sharing the recipe for baingan bharta today and hope you all love it. I have served with methi thepla today. You can even serve it with rice.

Ingredients

  • 1 Aubergine/Baingan big one
  • 1/2 cup Fresh green peas – 1/2 cup
  • 3 Tomatoes finely chopped
  • 1 Onion finely chopped
  • 1 tbsp Grated ginger
  • 3 Garlic Cloves chopped
  • 1 tsp Cumin seeds
  • 1 tsp Garam masala – 1 tsp
  • 1 tsp Red chilli powder
  • 1/4 tsp Turmeric Powder
  • Salt to taste
  • Mustard oil – 2 tbsp
  • Coriander leaves for garnishing

Instructions

  1. Grease the aubergine with some oil and make pricks all over it.
  2. Grill it on your gas stove as shown above from all sides till the skin starts peeling off.
  3. Remove it from gas stove and remove the skin and mash it nicely.
  4. Add oil in a frying pan and when its warm add cumin seeds, and onions. Saute it till onions start turn translucent.
  5. Add ginger and garlic and saute for a minute.
  6. Add tomatoes and saute it nicely for few minutes till tomatoes get mushy.
  7. Now add green peas and let it cook it on low flame for few minutes. Keep stirring.
  8. Now add mashed aubergine, garam masala, chilli powder, turmeric powder, salt and mix it well. Close the pan with a lid and let it cook for few minutes.
  9. Keep stirring in between and when oil starts leaving on sides transfer it into a bowl.
  10. Garnish it with some coriander leaves before serving. You can serve it with rice or flat bread.
