Thinai/Foxtail Millet Dosa

Thinai dosa made with foxtail millet is a healthy breakfast and very popular in South India. I have recently become a big fan of millets as they are really awesome in taste and highly nutritious. Foxtail millets helps controlling your blood sugar and cholesterol level. Its an ideal food for diabetic patients and also helps in reducing bad cholesterol and high antioxidant levels.

How to make Thinai Dosa?

Ingredients:
Thinai/Foxtail millet – 1 cup
Idli Rice/Boiled Rice – 2 cups
Urad Dal – 1 cup
Fenugreek seeds – 1 tbsp
Cooking Oil/Sesame Oil
Method:
Soak the millet, boiled rice and urad dal along with fenugreek seeds in some water in separate bowls for 5-6 hours. Now grind the urad dal with fenugreek seeds in your wet grinder or mixie with enough water to make a smooth batter. Next grind the millet and rice with water. Transfer the content in a pan and add some salt to taste and mix it well. If you feel the batter is too thick add some more water. Leave it overnight or 6-7 hours for fermentation.

Heat a tawa, grease with oil. Scoop a ladle full of the batter and spread to a circular shape. Pour few drops of oil along the sides of the dosa. Turn over once it reaches golden colour. Remove the dosa when it is golden on both sides.  Serve it hot with chutney.
