Easy Carrot Chutney Recipe

Carrot chutney is a great condiment to serve with dosa, idly etc. Carrots are a very good source of Vitamin A which helps in improved vision and anti-ageing. It also helps in keeping your skin beautiful and glowing. So, sharing a healthy chutney recipe today and hope you all enjoy it!

Easy Carrot Chutney Recipe

Make a quick and easy side dish with carrots to serve with dosa, idli etc..

Ingredients

  • Carrots - 2 medium size
  • Grated Coconut - 1/2 cup
  • Bengal gram/chana dalΒ - 2 tbsp
  • Dry Red chilies - 3
  • Salt to taste
  • Asafoetida - a pinch
  • Mustard seeds - 1 tsp
  • Few curry leaves
  • Sesame Oil - 2 tsp

Instructions

  1. Grate the carrot and keep it ready.
  2. Heat a frying pan and add chana dal and red chillies and stir fry for a minute.

  3. Add grated carrot and stir fry for a minute. Transfer content in a plate and let it cool down.

  4. Add fstir fried carrot- chillies, grated coconut in your blender and blitz it.

  5. Add little water to make it into a coarse paste. Transfer it into a bowl and add salt to taste and mix it well.
  6. Add 1 tsp oil in a small frying pan and add mustard seeds, curry leaves and a pinch of asafoetida. When mustard seeds crackle, add it into the chutney.

  7. You can serve this chutney with dosas, idlis etc.
