Easy Carrot Chutney Recipe
- Carrots - 2 medium size
- Grated Coconut - 1/2 cup
- Bengal gram/chana dal - 2 tbsp
- Dry Red chilies - 3
- Salt to taste
- Asafoetida - a pinch
- Mustard seeds - 1 tsp
- Few curry leaves
- Sesame Oil - 2 tsp
Grate the carrot and keep it ready.
Heat a frying pan with 1 tsp sesame oil. Add add chana dal and red chillies, and stir fry for a minute.
Add grated carrot and stir fry for a minute. Transfer content in a plate and let it cool down.
Add stir fried ingredients, grated coconut in your blender and blitz it.
Add little water to make it into a coarse paste. Transfer it into a bowl and add salt to taste and mix it well.
Add 1 tsp oil in a small frying pan and add mustard seeds, curry leaves and a pinch of asafoetida. When mustard seeds crackle, add it into the chutney.
You can serve this chutney with dosas, idlis etc.
