I’m sharing an easy Beetroot Raita recipe today. Β You will feel like eating this dish just seeing the soothing pink colour. Raita is a yogurt based side dish which you serve with rice or flat bread. The best part about raita is that it can be fixed in 10 minutes using easily available ingredients.
Beetroots are extremely good for health. I just love beets as they add beautiful color to any dish. I have added mint leaves which further add some freshness to the dish. Summer is already here is Bangalore and I can only think of eating refreshing, cool and light. This Beetroot raita is perfect for this weather. You can also try some eggless cupcake with beetrootΒ or even a burfi with beets.

Beetroot Raita Recipe
Ingredients
- Beetroot - 1/2 cup finely chopped
- 1 Onion finely chopped
- Mint leaves - 10
- Curd / dahi - 2 cups
- Cumin seeds - 1 tsp
- Red chili powder - Β½ tsp
- Salt to taste
Instructions

Combine curd and salt in a bowl and whisk to make it creamy.

Add finely chopped onions and beetroot in the whisked curd and mix it well.

Roast cumin seeds and powder it.

Add roasted cumin powder and red chilli powder and mix well.

Garnish with mint leaves and serve.
