Eggless Whole Wheat Dates Muffins

Warm and freshly baked muffins for breakfast are a delight. I made these eggless whole wheat dates muffins for my family today and for to share the recipe with a detailed video for you all. They are packed with goodess of dates and the best part is that it is eggless and made with whole wheat flour.

I have used Sprig Vanilla extract to make these muffins. They are made with real madagascar vanilla beans and you will simply love it! Even a small quantity spreads makes anything baked with it so aromatic. Eggless Whole Wheat Dates Muffins

Ingredients

  • 1 cup Wheat Flour
  • 1/2 cup Dates deseeded and chopped
  • 1 cup Milk
  • 1/4 cup Vegetable Oil
  • 1/4 cup Brown sugar powdered
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking Soda
  • 1/8 tsp salt
  • 1/2 Tsp Vanilla Extract
  • 2 tbsp Freshly grated coconut

Instructions

  1.  Sift wheat flour, baking powder, and baking soda, salt and keep it aside.

  2. Deseed dates and chop it. Soak it in hot milk for 30 minutes.

  3. Blend dates to make a paste.

  4. Add oil, sugar in a mixing bowl and beat well until sugar completely dissolves.

  5. Add dates paste and mix well.

  6. Now add flour slowly to the mix and fold. Do not over mix. The flour must get moistened.

  7. Add coconut and sprig vanilla extract and give a quick stir.

  8. Grease the muffin cups with some oil evenly or use liners and add the batter to it. Makesure to fill each muffin cup till 3/4 cup and sprinkle some nuts on top.

  9. Preheat oven at 180 degree Celsius.

  10. Bake at same temperature for 20 minutes.

  11. Once it has cooled down, remove from the muffin cup and enjoy!!

Recipe Notes

  1. You can check if it has baked properly by pricking a muffin with a toothpick. If it comes clean, then your muffins are done or else bake it for 5 more minutes.
  2. You can also add nuts like walnuts, cashews etc.
  3. Use any neutral oil for baking like olive oil or canola oil or sunflower oil.
