Idli is one of my family favourite breakfast. My kid loves it and even ready to eat it for lunch or dinner. I know what you are thinking that I’m exaggerating but believe me that’s how he is! So, I keep looking for options to make this family favourite breakfast more healthy and one of the ways I found is to make it with some kodo millets. Kodo Millet is high in fibre and low in sugar. It helps in managing blood sugar and weight management and specially useful for people who are suffering from diabetes or obesity. They also help in reducing constipation and lowers cholesterol levels. They are gluten free and high in proteins which will be highly beneficial for vegetarians. So, try out these healthy Varagarisi Idly for breakfast and enjoy!
I have served with some carrot chutney. You can serve it with any chutney or sambar of your choice.
Varagu Arisi Idly / Kodo Millet Idli
Prep Time 10 hours
Cook Time 10 minutes
Servings 20 idlis
Ingredients
- Varagarisi/Kodo Millet Rice - 3 cups
- Urad Dal/White Lentil - 1 cup
- Fenugreek seeds - 1 tbsp
- Salt to taste
Instructions

Clean and Soak the millet along with fenugreek seeds in some water for 3-4 hours.

Soak white lentil in another bowl.

Now grind urad dal with enough water to make a smooth batter. Grind millet with little water to make a smooth batter.

Transfer the content in a pan and add some salt to taste and mix it well. If you feel the batter is too thick add some more water and keep it overnight or 5-6 hours for fermentation.

Grease the idli plates with some cooking oil and fill it with the fermented batter.

Steam it in your cooker on medium flame for 8-10 minutes and serve it hot with some sambar or chutney.
