Moongphali Bhindi ki sabzi is a delicious peanut okra fry which is very popular in state of Maharashtra, India . I love okras especially when they are crispy and served with my favorite layered paratha. So, I often make okra stir fry and I love to make this Maharashtra style too by adding peanuts and goda masala.

Moongphali Bhindi - Peanut Okra Fry
Servings 4
Ingredients
- 15 Bhindi/okra chopped
- 2 Green chillies chopped
- 1 onion finely chopped
- 1/2 cup Peanuts
- 1/2 tsp Jeera/Cumin seeds
- 1/4 tsp Turmeric Powder
- 1 tsp Goda masala
- 1/2 tsp Red Chilli Powder
- 1 tsp Dry Mango Powder
- 2 tbsp Vegetable Oil
- Salt to taste
Instructions

Dry roast the peanuts for few minutes and let it cool down.

Grind to make a coarse powder.

Heat oil in a pan and add cumin seeds. Let it crackle.

Add onion and saute till translucent.

Add green chillies and chopped okra and stir fry for a few minutes.

Add coarsely powdered peanut and mix well.

Add turmeric powder, goda masala, coriander powder, red chili powder,dry mango powder and stir-fry for few more minutes.

Now add salt and mix well. Close the pan with a lid and keep it covered for 2 minutes.

Serve it hot with phulka or rice.
