Aloo Gobi Adraki

Aloo gobi adraki is a lovely stir-fry vegetable made using cauliflower and potatoes with added flavours and aroma of ginger. Cauliflower is one of my favourite vegetable. I have already shared few other recipes using cauliflower like Gobi Masala, Gobi paratha , Keema Gobi (Just click on the names for the recipe).This is another quick recipe and you can adjust spices according to your taste. Enjoy some delicious stir-fry veggies with ginger flavor!
Ingredients
  • Cauliflower florets – 2 cups
  • Peeled and Chopped potatoes – 1 cup
  • Chopped Tomatoes – 1 cup
  • Cumin seeds – 1 tsp
  • Garam Masala – 1 tsp
  • Grated Ginger – 1 tbsp
  • Yogurt/dahi – 2 tbsp
  • Slit Green chillies – 2
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp
  • Ginger – cut into thin strips (2 inch piece)
  • Salt to taste
  • Mustard Oil – 2 tbsp
  • Coriander leaves for garnishing
Instructions
  1. Remove the stem and separate the florets in cauliflower. Peel and chop the potatoes. Wash the vegetables nicely and keep it aside.
  2. Heat a frying pan and add cooking oil. Add cumin seeds, ginger, green chilies and saute for few seconds.
  3. Add chopped potatoes, cauliflower and turmeric powder and mix it well.
  4. Stir it for few minutes on high flame and then add sliced ginger, chopped tomatoes, garam masala, red chilli powder, yoghurt and salt. Mix it well
  5. Cover the pan and cook on low heat for few minutes. Cook till the vegetables are totally tender. Keep stirring from time to time.
  6. Serve it hot with some rice or roti and garnish it with some coriander leaves before serving.
