Puttu is a famous dish from Kerala, India and usually served at breakfast time. It is usually served with some kadala curry ( Click here for recipe ). You can also serve it with green gram lentil ( Click here for recipe ).
Ingredients:
Raw white Rice flour – 1 cup
Grated coconut – 1 cup
Salt to taste
Method:
Soak white rice in some water in a bowl for an hour. Drain the water completely and grind it to make a rice flour in your dry grinder. Spread the flour in a dry cloth or newspaper and keep it in a dry place for few hours. Transfer the content in a bowl and keep it ready.

Take a cup of warm water and add salt to it. Sprinkle this water little by little over the white rice flour and mix. As shown on picture 2, keep mixing and add little by little water. If any lumps are formed, don’t worry as you can break it with your hands. When you hold the mix in your hand it should hold to form a ball but it should crumble back easily as shown in picture 3.

Now your mix is ready. Add some amount of grated coconut firstly in the puttu maker and then some rice flour followed by coconut and again rice flour till it reaches the edge of the puttu maker. Steam it for about 5 minutes on high flame and then 6-8 minutes on low flame.

Remove and serve it hot with some Kadala Curry – (Click here for recipe for Kadala Curry ).
Tips:
1) I have used white rice but you can also use brown rice and follow the same steps.
2) If you don’t have a puttu maker handy, you can make the same thing in your idli stand. You can mix coconut and rice flour and add it to the idli stands.
3) You can also add different layers of brown rice and white rice to make it colorful.
