Aloo gobi adraki is a lovely stir-fry vegetable made using cauliflower and potatoes with added flavours and aroma of ginger. Cauliflower is one of my favourite vegetable. Enjoy some delicious stir-fry veggies with ginger flavor!
Ingredients
- Cauliflower florets – 2 cups
- Peeled and Chopped potatoes – 1 cup
- Chopped Tomatoes – 1 cup
- Cumin seeds – 1 tsp
- Garam Masala – 1 tsp
- Grated Ginger – 1 tbsp
- Yogurt/dahi – 2 tbsp
- Slit Green chillies – 2
- Turmeric powder – 1/2 tsp
- Red chili powder – 1 tsp
- Ginger – cut into thin strips (2 inch piece)
- Salt to taste
- Mustard Oil – 2 tbsp
- Coriander leaves for garnishing
Instructions
- Remove the stem and separate the florets in cauliflower. Peel and chop the potatoes. Wash the vegetables nicely and keep it aside.
- Heat a frying pan and add cooking oil. Add cumin seeds, ginger, green chilies and saute for few seconds.
- Add chopped potatoes, cauliflower and turmeric powder and mix it well.
- Stir it for few minutes on high flame and then add sliced ginger, chopped tomatoes, garam masala, red chilli powder, yoghurt and salt. Mix it well
- Cover the pan and cook on low heat for few minutes. Cook till the vegetables are totally tender. Keep stirring from time to time.
- Serve it hot with some rice or roti and garnish it with some coriander leaves before serving.
