Vella aval is a traditional sweet from South India. This is mainly made with beaten rice and jaggery. It is specially made for festivals or auspicious occasions as an offering for God. Aval is Lord Krishna’s favorite. So, we make it for Krishna jayanthi.

Vella Aval Recipe
Ingredients
- Beaten Rice/Aval/Poha – 1 cup
- Jaggery – 1/2 cup powdered
- Freshly Grated Coconut – 1/4 cup
- Green Cardamom - 2 powdered
- Ghee – 2 tsp
- Cashews - 8 broken
- Raisins - 8
Instructions

Clean beaten rice in a colander under fresh water for few minutes. Drain the water and spread it on a plate.

Add 1 tsp ghee in a pan and roast cashews and rasins. Transfer in a plate.

Add 1/4 cup water in the pan and when the water starts boiling add powdered jaggery and mix well till jaggery melts. Remove from flame and strain it. Clean the pan also once.

Add the strained jaggery water again in the pan again and let it simmer. When it starts becoming thick, add grated coconut and mix well.

Now add beaten rice and stir gently.

When the rice soaks the jaggery completely, add 1 tsp ghee and mix well.

Remove from flame and add cardamom powder, roasted cashews and raisins and mix well. Transfer the content into a bowl and serve it warm.
