I love enjoying hot cup of tea or soups. I decided to make some dal shorba and combine it with pumpkin. I have used red lentil to make this soup and used mild spices. The addition of pumpkin adds a light sweetness to this soup. It is a healthy and comforting soup. So, sharing the recipe and hope you try it out and share the feedback with me.
Pumpkin Lentil Soup / Kaddu Dal Shorba
Flavourful, comforting red lentil soup with a combination of sweetness from pumpkins!
Ingredients
- Masoor Dal / Split Red lentil - 1/2 cup
- Onion - 1 (finely chopped)
- Pumpkin - 1 cup (chopped)
- Tomatoes - 2 (chopped)
- Garlic cloves - 2 (chopped)
- Turmeric Powder - 1/4 tsp
- Red Chilli powder - 1/2 tsp
- Garam Masala - 1/2 tsp
- Vegetable Oil - 1 tbsp
- Salt to taste
- Cilantro/Coriander leaves for garnishing
Instructions

Heat oil in a frying pan and sauté onions till translucent.

Stir in garlic.

Now add chopped pumpkin and tomatoes and stir for 2 minutes. Add turmeric powder, chilli powder and garam masala and quickly stir it.

Transfer this into a pressure cooker along with lentil.

Add 1 cup of water and pressure cook till lentils are nicely cooked. Let it cool down and blend it nicely using blender.

Heat it in a pan and add salt to taste. Add more water if its too thick. Serve it hot garnished with coriander leaves.
