Ingredients:
Chopped Broad Beans – 1 cup
Sweet corn – 1 cup
Peeled and chopped potatoes – 1 cup
Peeled and chopped carrot – 1 cup
Finely chopped onion – 1/2 cup
Finely chopped tomatoes – 1 cup
Cumin seeds – 1 tsp
Mustard seeds – 1 tsp
Garam Masala – 1 tsp
Turmeric Powder – 1/4 tsp
Cinnamon Powder – 1/4 tsp
Cardamom Powder – 1/4 tsp
Red chilly Powder – 1/2 tsp
Salt to taste
Asafoetida
Cooking Oil
Coriander leaves for garnishing
Method:
Add 1-2 tbsp oil in a frying pan and when oil is warm add cumin seeds, mustard seeds and a pinch of asafoetida. When mustard seeds crackle add onions to it and saute. When onions turn golden brown add tomatoes and saute for few minutes. Now add all chopped vegetables – broad bean, potatoes, corn, caroot and mix well. Add salt, turmeric powder, cinnamon powder, cardamom powder, red chilly powder, garam masala and mix well. Saute for few minnutes and add little water and close the pan and cook on low flame for few minutes till all vegetables are fully cooked and soft. Keep stirring in between. Remove from the pan and garnish it with coriander leaves before serving.
