Masala bharwa arbi is a spicy and aromatic curry made with fried taro root vegetable. The blend of spices is filled in half boiled taro roots and then fried with tomato gravy. The curry is simply delicious and can be served with roti or rice.

Masala Bharwa Arbi
Ingredients
- 12 Colacasia/Arbi /Taro root
- 1 Onion finely chopped
- 2 Tomatoes finely chopped
- 1 tbsp Ginger grated
- 5 Garlic cloves chopped
- 1 tbsp Curd
- 1 tsp Cumin seeds
- 1/2 tsp Carom seeds
- 1/4 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Garam Masala
- 1 tsp Amchur Powder
- Salt to taste
- 3 tbsp Vegetable Oil
- Coriander leaves for garnishing
Instructions

Clean taro roots nicely and half cook them. Do not fully cook or they will become mushy. Peel them and set it aside.

Add turmeric powder, red chilli powder, amchur powder, garam masala, 1/2 tsp salt in a small cup and mix well.

Slit taro root in the middle till half way and fill with the masala mixture in it.

Heat a frying pan and add 2 tbsp oil. Fry taro roots in the oil for few minutes. Remove them from the pan.

Add 1 tbsp oil in the same pan and add cumin seeds, carom seeds and let it crackle.

Now add chopped onions and sauté.

When onions turn golden brown, add ginger and garlic cloves and saute for a minute.

Now add chopped tomatoes to it and saute it till it gets mushy.

Add remaining masala, 2 tbsp water, curd and saute for a minute.

Now add fried taro roots to it and and mix it well. Lower the flame and close the pan for few 2 minutes.

Transfer in a bowl, garnish with coriander leaves and serve.
