Batata vada and Vada pav are famous fast food from streets of Mumbai. Batata vada can be served seperately with chutney but when it is combined with a pav (soft bread roll) and spicy chutney, it becomes even more tempting. I still remember the first time I ate a vada pav in Lonawala. Lonawala is small town in outskirts of Pune, India. Me and my family drove down from Pune to Lonawala on a rainy day. We all enjoyed the trip eating Vada pav, chikkis and drenching completely in rain :)..
Batata vada is a fried potato dumpling flavored with garlic and spices. You got to make these dumplings before you proceed to make vada pav..

Vada Pav is an Indian burger where potato dumpling is stuffed inside soft bread roll and served with chutney. Vada pav is one of the most famous street food of Mumbai. So, enjoy making batata vada and vada pav today. Anything cooked with joy and love tastes even better.
Serve vada pav with Spicy dry Garlic Chutney and Hari Chutney.
- Pav/ soft Dinner bread rolls – 4
- Boiled Potato – 2
- Garlic cloves – 2 (chopped)
- Green chilies – 2 (chopped)
- Curry leaves – 1 sprig
- Asafoetida/hing – ⅛ tsp
- Coriander leaves – 2 tbsp (chopped)
- Lemon – 1
- Turmeric powder – ½ tsp
- Salt as per taste
- Mustard seeds – 1 tsp
- Besan/Bengal gram flour – 1 cup
- Rice flour – 1/4 cup
- Red chilli powder – 1 tsp
- Cooking soda/baking soda – ⅛ tsp
- Salt to taste
- vegetable Oil for deep frying – 1 cup
- Mash boiled potatoes nicely and keep it aside.
- Heat 2 tsp oil in a pan. Add mustard seeds and when it crackles, add asafoetida, green chilies, chopped garlic, curry leaves and saute for a minute on low flame.
- Add the mashed potatoes, ¼ tsp turmeric powder, salt and saute for a few minutes. Transfer the content in a bowl. Squeeze juice of 1 lemon and mix well.
- After it cools down, add chopped coriander leaves and mix well. Make small balls out of it and keep it ready.
- Now, lets prepare the batter. Add besan, rice flour, red chilli powder, ¼ tsp turmeric powder, baking soda,salt in a mixing bowl and mix well. Add water slowly and make a smooth batter. The batter should not be too thick or too thin. The consistency should be right enough to dip the stuffing balls and fry them.
- Heat oil in a deep frying pan and when its warm, keep the flame on medium level.
- Dip the vegetable balls in the batter coat it evenly with the batter.
- Slowly drop the ball in the hot oil and fry them till they turn golden brown. Drain excess oil and keep it ready.
- Slice the bread roll without breaking it into two parts.
- Spread some hari chutney and sprinkle dry garlic chutney.
- Place the prepared batata vada sandwiched in the bread roll.
