Ingredients:
Baby Potatoes – 1/2 kg
Finely chopped Capsicum – 1 cup
Finely chopped Onions – 1 cup
Red chilly Powder – 1 tsp
Black pepper Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Cumin seeds – 1 tsp
Tomato sauce/Ketchup – 2 tbsp
Salt to taste
Cooking Oil – 1 tbsp
Coriander leaves for garnishing
Method:
1) Wash the baby potatoes and add them in pressure cooker with 1 cup of water and cook it for 1-2 whistles or till they are half cooked. When the pressure comes down and the content has cooled down, peel the baby potatoes and keep it a separate bowl.
2) Add cooking oil in a frying pan and add cumin seeds and chopped onions and saute till onions turn golden brown. Now add chopped capsicum and saute for a minute.
3) Add the baby potatoes, turmeric powder and saute for few minutes till the potatoes are nicely fried and roasted.
4) Now add tomato sauce, 2 tbsp of water, red chilly powder, black pepper powder, salt to taste and mix it well. Saute for a minute and transfer the content in a bowl.
Garnish it with some coriander leaves/cilantro.
This dish can be served hot with some Indian flat bread.
