I’m sharing the Vegetable Jalfrezi Recipe today. Vegetable jalfrezi is a simple stir-fry vegetable dish cooked on high flame with combination of spices. You can use any combination of vegetables and it goes very well with flat bread like naan, phulka etc. This stir-fry veggie looks colorful and one of my favorite. I have used red and yellow bell pepper, carrots, beans and various spices. So, sharing the recipe and hope you try it out and enjoy!
Vegetable Jalfrezi Recipe

Delicious stir-fry vegetables blended with spices!
Ingredients
- Bell pepper– 2 (I have used yellow and red variety)
- Potatoes – 1
- Carrot – 1
- French beans – 4
- Tomatoes – 2 (Finely chopped)
- Onion – 1 (sliced)
- Grated Ginger – 1 tbsp
- Garam Masala – 1 tsp
- Cumin Seeds – 1 tbsp
- Coriander seeds – 1 tsp
- Turmeric powder – 1/2 tsp
- Red Chili powder – 1 tsp.
- Sugar – 1 tbsp
- Vegetable Oil – 3 tbsp
- Salt to taste
Instructions
- Heat 2 tbsp oil in a non-stick pan and add chopped bell pepper, carrots, beans, potatoes. Keep stirring them on high flame for 3-4 minutes. Low the flame and cover the pan for a minute. Transfer the content in a bowl.
- Heat the same pan and add 1 tbsp oil. When oil is warm, add cumin seeds and coriander seeds.
- When cumin seeds crackle, add the ginger and sliced onions and fry till onions turn golden brown.
- Now add finely chopped tomatoes and fry for few minutes on low flame till tomatoes become soft.
- Add turmeric powder and red chili powder, garam masala and mix.
- Add fried vegetables, sugar and salt and mix well. Fry them for 2-3 minutes on medium flame and keep stirring in between.
- Transfer it in a bowl and serve hot with flat bread.
