I always love to have some crunchy snack with my evening tea. Diamond cuts also known as khara maida biscuits are easy to make and very addictive. You simply can’t stop yourself and end up munching the whole plate. So, make sure you make a whole lot if you are planning to share it with your family and friends!


Khara Maida Biscuits
Ingredients
- Maida / all purpose flour - 1 cup
- Sooji/Semolina - 2 tbsp
- Melted Butter - 2 tbsp
- Red chilli powder - 1 tsp
- Cumin Seeds/Jeera - 1 tsp
- Salt to taste
- Vegetable Oil for deep frying
Instructions

Add semolina, all purpose flour, red chilli powder, cumin seeds, salt in a mixing bowl and mix it well. Now add the butter and mix it well. The texture will be crumbly.

Add water little by little and knead to a soft dough.

Dust the platform with dry flour. Place the dough and using rolling pin, roll out the dough. Cut into diamond shapes using a sharp knife or pizza cutter.

Heat oil for deep frying. Gently lift the diamond pieces and add to the hot oil. Fry on a medium flame until golden brown.

Drain the excess oil and store it in an airtight container.

This recipe sounds delicious, but all that fat would be too much for my old body. A young person could handle it with ease. Visiting from UBC,
