Shakkarpara is one of my all time favorite snack. I got addicted to them while living in Delhi. These sweet maida biscuits are delicious and easy to make too. They are also known as shankarpoli or even lakdi mithai. It is very famous in Gujarat, Maharashtra and Karnataka.
Check out this quick video to make these shankarpoli:
I have used Idhayam Mantra groundnut oil for deep frying shakkarpara. I love using Idhayam Mantra groundnut oil because it is pure and natural. It is perfect for making snacks and I can even reuse the oil afterwards for tempering curry, dal etc. I love Idhayam sesame oil too and been using it for over 10 years now. Now slowly add sugar water little by little and knead to a soft dough.
Dust the platform with dry flour. Place the dough and using rolling pin, roll out the dough. Cut into diamond shapes using a sharp knife or pizza cutter.
Heat oil for deep frying. Gently lift the diamond pieces and add to the hot oil. Fry on a medium flame until golden brown.
Drain the excess oil and store it in an airtight container.
You can totally avoid adding cardamom.
