Sundal is a quick and easy South Indian snack. You will find many variations of this snack and it is an integral part of Navratri festival in South India. Make this red double beans sundal this season.
The most common sundal which is made during Navratri festival is Kondakadalai Sundal and I have already shared a recipe for it on my blog. I usually make sundal as it is healthy and a filling snack which you can enjoy around tea-time instead of deep-fried snacks. I decided to make some red double beans sundal today. The best part about this snack is that it is so simple to put together. Just pressure cook, add quick tempering and some grated coconut and its all ready! So, sharing the recipe and hope you all enjoy it too..
Red Double Beans Sundal
Ingredients
- Red double beans – 1 cup
- Green Chillies - 2 finely chopped
- Mustard seeds – 1 tsp
- Turmeric Powder – 1/4 tsp
- Grated coconut – 1/4 cup
- Curry leaves – 1 sprig
- Salt to taste
- Vegetable Oil – 1 tbsp
- Asafoetida – 1/8 tsp
Instructions

Pressure cook red double beans with enough water and turmeric powder till they are cooked and soft. Drain the water in a bowl. You can drink this water or use it in any soup.

Add oil in a frying pan and when its warm add mustard seeds and a pinch of asafoetida. When mustard seeds crackle, add curry leaves and green chillies. Saute on low flame for 30 seconds.

Now add cooked double beans and salt and mix it well. Remove from the flame and add fresh grated coconut and mix well.

You can serve it as a snack or a side-dish.
