Gajar ka halwa is a delicious carrot pudding garnished with some mixed nuts. I have lived more than half of my life in Delhi and as a foodie, I have a special attachment to that place. I’m also fond of sweets and desserts and reading my blog, you all would have understood that by now. I usually wait for the lovely red carrots or Delhi carrots as we call them to make this pudding and the wait is usually long as they are only available in winters. I do occasionally indulge in making this dessert with the available carrots and add loads of dry fruits to it.
You will love this dessert if you love carrots. So, sharing a quick video recipe to Make Carrot Halwa:
Ingredients:
Milk – 500 ml
Method:
1) Take a pan and add 1/2 liter milk and bring it to boiling point.
2) Lower the flame and continue to boil. Keep stirring so that it does not stick to the pan.
3) Stir vigorously when milk starts to thicken. Khoya is ready when the milk stops simmering and its completely dry.
4) Transfer it into a boil and keep it aside to cool.

Gajar ka Halwa / Carrot pudding
Ingredients
- Grated Crrot - 2 cups medium sized
- 1 cup Milk
- 1/2 cup sugar
- 2 tbsp Ghee
- 1/2 cup khoya/Dried Milk
- 2 Green Cardamom crushed
- 2 tbsp Raisins
- 2 tbsp Cashews broken
Instructions

Add 2 tsp ghee in a heavy bottom frying pan and fry cashews & raisins on low flame till cashews turn light brown. Transfer it in a plate and keep it ready for garnishing.

Clean the carrots, peel the skin and grate it. Add it in same pan and sauté the carrots in low flame.

Now add milk to it and cook on low flame for about 10-15 minutes.

Keep stirring in between and when the carrots have soaked the milk, add sugar to it and mix it well.

Cook it for 5 minutes till the sugar is completely soaked by the carrots and add khoya and cardamom powder and mix it well.

Transfer it into a bowl and add nuts for garnishing.
