Shakkarpara is one of my all time favorite snack. I got addicted to them while living in Delhi. These sweet maida biscuits are delicious and easy to make too. They are also known as shankarpoli or even lakdi mithai. It is very famous in Gujarat, Maharashtra and Karnataka.

Shakkarpara Recipe
Ingredients
- Maida / all purpose flour - 1 cup
- Sooji/Semolina - 2 tbsp
- Melted Butter - 2 tbsp
- Sugar - 1/4 cup powdered
- Water - 1/4 cup
- Green cardamom - 2 powdered
- Salt - 1/4 tsp
- Idhayam Mantra Groundnut oil for deep frying
Instructions

Add powdered sugar and water in a small bowl and mix it well till sugar completely dissolves.

Add all purpose flour, semolina, cardamom, salt in a mixing bowl and mix it well. Now add the butter and mix it well. The texture will be crumbly.

Now slowly add sugar water little by little and knead to a soft dough.

Dust the platform with dry flour. Place the dough and using rolling pin, roll out the dough. Cut into diamond shapes using a sharp knife or pizza cutter.

Heat oil for deep frying. Gently lift the diamond pieces and add to the hot oil. Fry on a medium flame until golden brown.

Drain the excess oil and store it in an airtight container.
Recipe Notes
You can totally avoid adding cardamom.
