Idli Upma Recipe

What do you do with leftover idlis? Make this quick and easy idli upma! You can make it more colorful and healthier by adding fresh vegetables. You can serve it as breakfast with coconut chutney or even serve as an evening snack.

Idli Upma Recipe

Ingredients

  • 4 idli crumbled
  • 1 Onion finely chopped
  • 1 Carrot peeled and chopped
  • 4 Beans finely chopped
  • 2 Green chilies finely chopped
  • 1 tbsp ginger chopped
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds/jeera
  • 1/8 tsp Asafoetida/hing
  • 1 sprig Curry leaves
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • 1 tbsp Lemon juice
  • 2 tsp Vegetable Oil
  • Fresh coriander leaves for garnishing

Instructions

  1. Crumble idlis and set aside. 

  2. Heat oil in a frying pan and add mustard seeds, cumin seeds and asafoetida.

  3. When the mustard seeds splutter, add onions and sauté till onions turn light brown.

  4. Add curry leaves, chopped ginger and green chillies and saute for few seconds.

  5. Add carrots, beans and little water and close the pan. Let the veggies cook till they are soft.

  6. Add turmeric powder and salt to taste.
  7. Add crumbled idli and mix well.

  8. Remove from the stove. Add lemon and mix.

  9. Garnish with coriander leaves and serve it hot.

    What a beautiful, healthy and colorful dish! I’ve never had idli, and even had to look it up to see what it was — kind of looks like scrambled eggs, but I see that it’s a rice/bean cake. I’ll have to look for them.
