I recently replaced my gas stove and switched over to 4 burner Stainless steel gas stove burner by Preethi Kitchen Appliances. Morning is the most hectic time in kitchen for me as I would be simultaneously cooking breakfast, making snack and lunch to pack for my kid and husband. Eggless jackfruit Pancake

Ingredients

  • 1 cup Jackfruit chopped
  • 1 cup All purpose Flour
  • 1 cup Milk
  • 1 tbsp Sugar
  • 1/4 tsp Salt
  • 2 green cardamom
  • 1 tsp Baking Powder
  • 1 tbsp Butter

Instructions

  1. Grind jackfruit, cardmom and milk together.
  2. Add flour, sugar, salt, baking powder in a mixing bowl. Mix well.
  3. Now add jackfruit paste and mix well.
  4. Heat a griddle for a minute.
  5. Lower the flame, sear some butter and pour a ladle full of batter. Do not spread and let it cook on low flame. You will see holes forming and color changing.
  6. Carefully flip it to the other side and let it cook for 30 seconds.
  7. Serve it warm topped with butter and honey.

    These jackfruit pancakes look excellent and lovely and fluffy. I imagine jackfruit is great way to make them more substantial, keep hunger at bay.

    How creative! I have never made anything with jackfruit. I think I only tried it once in my life, in Thailand ! Anyways, they seem to be a thing right now and these pancakes look so delicious that I am really tempted to try it!

    These were delicious! I didn’t have cardamon, but I used 1/6th teaspoon cinnamon and 1/6th teaspoon nutmeg as a substitute. Great way to use the plethora of jackfruit that I have.
