Makhana kheer is a pudding which is specially made during Navratri festival in North India. It is made with puffed lotus seeds which is cooked in milk. It is a simple pudding and you can serve it either warm or chilled. I usually refrigerate it for few hours if I’m serving it as a dessert. You can make Makhana kheer in flat 20 minites and usually loved by everyone..

A delicious pudding made with puffed lotus seeds cooked in milk with cardamom flavour!
Ingredients
  • Whole Milk – 4 cups
  • Sweetened Condensed Milk – 150 gm
  • Makhana/Puffed lotus seeds – 2 cups
  • Ghee – 1 tbsp
  • Cardamom powder – 1 tsp
  • Few Broken cashews and few raisins for garnishing
Instructions
  1. Add 1 tsp ghee in frying pan and toss cashews and raisins for a minute and keep it aside in a bowl for garnishing.
  2. Add 1 tsp ghee in frying pan and toss lotus seeds for a minute and crush it. Keep it aside in a separate bowl.
  3. Add milk in pan and when it starts boiling, add lotus seeds and mix it well. Let it cook for 5-6 minutes on low flame.
  4. Now add condensed milk and let it cook for few minutes. Transfer the content in a bowl and add cardamom powder. Garnish it with cashews and raisins before serving.
  5. You can serve it either hot but I usually refrigerate it for few hours and serve it chilled.
Notes
You can also use 1/4 cup of sugar in place of condensed milk. Adjust sweetness according to your taste.
