The lotus flower produces edible seeds, which you can eat cooked in different ways. They are good source of protein, magnesium, potassium, and phosphorus. They are also low in saturated fat and cholesterol. I had earlier shared a recipe for Makhana kheer and today sharing a recipe to make a simple raita with puffed lotus seeds.

Ingredients:
Lotus Seeds/Makhana – 2 cups
Low fat Plain yogurt/ dahi – 3 cups
Skimmed Milk – 1/2 cup
Chat Masala/Black pepper powder – 1 tsp
Red chili powder – 1/2 tsp
Salt to taste
Method:
1) Combine dahi, milk and salt in a bowl and whisk to make it creamy. Make sure there are no lumps.
2) Roast lotus seeds to low flame for few minutes till it turn very light brown. Transfer in a seperate bowl and let it cool down completely
3) Add makhana in the whisked curd and mix it well.
Add chat masala, chilly powder before serving.
Tips:
1) Add makhana only 5-10 minutes before serving or they will become soggy.
