Pickles are something which I love to have any day with my lunch or dinner. Spicy Lemon pickles are one of my favourite. I can even have them with a simple bowl of curd rice. Lemons are great source of Vitamin C and helps in digestion. This is a recipe for making easy lemon pickles. It goes well with curd rice, parathas, theplas and you can make it with easily available ingredients. So, sharing the recipe and enjoy some spicy lemon pickles made in your own kitchen.

Ingredients
- Lemons – 15
- Salt – 1/2 cup
- Turmeric Powder – 1 tsp
- Red chili powder – 1/2 cup
- Sesame oil – 1 tbsp
- Fenugreek Seeds – 1tsp
- Mustard seeds – 1 tsp
- Asafoetida – a generous pinch
Instructions
- Wash and dry the lemons with a clean cloth. Cut each lemon into 8 pieces. Remove seeds gently.
- Mix the lemons with salt and turmeric powder and transfer the content into a clean glass bottle.
- Keep it aside for 7-8 days and shake the bottle once in 2 days.
- Dry roast fenugreek seeds on low flame for 2-3 minutes and powder it.
- Now the lemons would have started leaving water, so add 1 tbsp of salt, fenugreek powder and red chili powder and mix it well.
- Heat sesame oil and add asafoetida and crackle mustard seeds.
- Cool the oil completely and add it to the pickles.
- Leave the pickles for marination for at least 5-6 days.
- Serve with rice or flat bread your choice.
