Phirni is a delicious creamy dessert made with broken rice combined with milk and my family loves it. The aroma of saffron and cardamom makes it even more delicious! Kesar means saffron and saffron adds richness to this sweet dish. It is also known as shahi phirni as saffron is added in it.

Phirni / Rice Pudding
A delicious pudding made with rice and milk and flavoured with cardamom and saffron!

Cook Time 30 minutes
Total Time 1 hour 30 minutes
Servings 2
Ingredients
- 2-3 tbsp Basmati rice - 1/4 cup
- 2 cups Full cream Milk
- 1/4 cup Sugar
- 2 Green Cardamom
- 8-10 Saffron strands
- 2 tbsp Crushed pistachios for garnishing
- condensed milk
Instructions

Clean the rice and soak for 1 hour in some water. Drain the water and grind this rice.

Soak the saffron strands in 2 tbsp warm milk.

Heat milk in a thick bottomed pan when the milk starts boiling, lower the flame and add the grounded rice.

Keep stirring and cook on a low flame. Do not cover the pan.

Remove the outer layer of green cardamoms and powder it in a mortar and pestle.

When the rice is almost cooked, add sugar, condensed milk and saffron.

Stir and cook for 5 more minutes till it becomes creamy and thickens.

Add cardamom powder and stir it. Transfer the content in a serving bowl and refrigerate.

Garnish with some crushed pistachios before serving.

It is sweet? I didn't see any sweetener in the ingredient list! Maybe Cardamom Powder? I've never cooked using that powder before. Will have to check around to see if I can get some. BTW my hubby LOVES rice pudding!
