Coconut cookies with a cup of filter coffee would be an ideal start of the day for my father. My mom always used to bake these cookies and it brings back so many childhood memories for me..I used to love the aroma when my mom used to bake something for us and within minutes me and my sister would gobble all of them ..I can’t match my mom anyway but loved to revive the memories.
So, when Puthuyugam Tv channel crew asked me to make something with a theme of cardamom, I could only think these scrumptious cookies. I had so much fun shooting and making these cookies again. Thanks to the wonderful crew and giving me this opportunity to show-case my recipes. This is the third dish which I have made for the show – Konjum Soru Konjum Varalaru. Isn’t it just exciting to see yourself on tv?

Eggless Coconut Cookies
Try some delicious eggless cookies made with fresh coconut and flavours of cardamom!
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 40 minutes
Servings 12 cookies
Ingredients
- Maida / All purpose flour - 1 cup
- Powdered Sugar - 1/2 cup
- Butter - 1/2 cup melted and at room temperature
- Freshly desiccated Coconut - 1/2 cup
- Cardamom Powder - 2 tsp
- Baking Powder - 1 tsp
- Milk - 2 tbsp
Instructions

Sift all purpose flour, baking powder together and keep it aside.

Add butter at room temperature and sugar in another bowl and mix well.

Now add all purpose flour, sugar, grated coconut, cardamom powder, milk and mix well with your hands to make a soft dough.

Take a small portion of dough and flatten it gently with your hands and place it on cookie tray.

Keep at least 1 inch distance between each cookie.

Preheat oven at 180 °C.

Set the timer for 15 minutes and place the cookie tray for baking at the same temperature.

When the edges start turning golden, remove from the oven and place them on wire rack for cooling.

When they have completely cooled down store them in an air-tight container. You can enjoy them with your morning or evening tea/coffee.
Recipe Notes
My first batch of cookies took 18 minutes and remaining cookies 15 minutes. So, if you see that the cookie colour has not changed to light brown on the edges keep them in oven for few more minutes and keep a watch on them. Add milk only if you feel the dough is not soft enough.
