Aloo Bhindi Ki Sabzi Recipe

Ingredients

  • 250 gm Bhindi/okra chopped
  • 2 potatoes peeled & chopped
  • 1 Onion finely chopped
  • 1 tsp jeera/cumin seeds
  • 1 Green chilli finely chopped
  • 1 sprig curry leaves
  • 1/4 tsp Asafoetida
  • 1/4 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 1 tsp Garam masala powder
  • 1 tsp Amchur powder/dry mango powder
  • Salt to taste
  • 2 tsp Groundnut oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Let it crackle.

  2. Add onion, green chilli, curry leaves and sauté till translucent.

  3. Add chopped okra & potato.

  4. Add turmeric powder, red chili powder, dry mango powder, garam masala and stir-fry for few more minutes on high flame.

  5. Now add salt and mix well. Serve it warm with roti.
