Baingan bharta Recipe

Ingredients

  • 1 Aubergine/Baingan big one
  • 1 cup Fresh green peas – 1/2 cup
  • 2 Tomatoes finely chopped
  • 1 Onion finely chopped
  • 1 tbsp ginger chopped
  • 3 Garlic Cloves chopped
  • 1 tsp Cumin seeds
  • 1 tsp Garam masala – 1 tsp
  • 1 tsp Red chilli powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Turmeric Powder
  • Salt to taste
  • Mustard oil – 2 tbsp
  • Coriander leaves for garnishing

Instructions

  1. Grease the aubergine with some oil and make pricks all over it.
  2. Roast it on your gas stove as shown above from all sides till the skin starts peeling off.

  3. Remove it from gas stove and remove the skin and mash it nicely.
  4. Add oil in a frying pan and when its warm add cumin seeds, and onions. Saute it till onions start turn translucent.
  5. Add ginger and garlic and saute for a minute.
  6. Add tomatoes and saute it nicely for few minutes till tomatoes get mushy.
  7. Now add green peas and let it cook it on low flame for few minutes. Keep stirring.
  8. Now add mashed aubergine, garam masala, chilli powder, coriander powder, turmeric powder, salt and mix it well. Close the pan with a lid and let it cook for few minutes.

  9. Keep stirring in between and when oil starts leaving on sides transfer it into a bowl.
  10. Garnish it with some coriander leaves before serving. You can serve it with rice or flat bread.
