Ingredients

  • 1 cup Raw rice
  • 1 Raw mango
  • 1/4 cup Shredded coconut
  • 1/4 tsp Turmeric Powder
  • 1 tsp Mustard seeds
  • 1 tbsp Channa dal/split chickpeas
  • 2 tsp Urad dal/white lentil
  • 2 Red chillies
  • 2 Green chillies chopped
  • 1 sprig Curry leaves
  • Ginger  – 1 tbsp finely chopped
  • Asafoetida – 1/8 tsp
  • Peanuts - 10-12
  • salt to taste
  • Coconut oil - 1 tbsp
  • Coriander leaves for garnishing

Instructions

  1. Pressure cook rice with 2+1/4 cup of water. Spread the cooked rice in a plate a and keep it aside.
  2. Peel and discard the seed of the mango. Grate it.

  3. Heat oil in a pan and add mustard seeds and a pinch of asafoetida. When they crackle, add channa dal, urad dal, peanuts and saute till lentils becomes brownish.
  4. Add red chillies, green chillies, ginger and curry leaves and saute for a few seconds. Lower the flame and add grated raw mango, coconut and sauté for a minute.

  5. Add cooked rice and salt and mix it well.
  6. Transfer it into a serving bowl, garnish with coriander leaves and serve it.
