Sunnundalu - Urad Dal Ladoo

Ingredients

  • 1 cup Urad Dal/white lentil
  • 3/4 cup Jaggery
  • 1 tbsp Raw Rice
  • 1/2 cup Ghee
  • 2 Cardamom powdered
  • 10 cashews broken
  • 10 almonds broken

Instructions

  1. Roast the urad dal and rice in a pan on low flame for few minutes. Keep stirring till the lentils turn brown color and it will start leaving a nice aroma. Transfer in a plate and let it cool down.

  2. Add roasted urad dal and cardamom in your food processor and grind it to a coarse powder.

  3. Powder jaggery and add it in a bowl. Add the powdered urad dal in the bowl and mix well. Powder cardamom and add it too.

  4. Now heat ghee in a frying pan. Add broken cashews and almonds. Roast them till cashews turn golden brown.

  5. Switch off flame and slowly add urad dal powder. Add jaggery and cardamom powder. Mix well with a ladle. When its warm itself start making small balls of the mix and keep it aside.

  6. Once it completely cools down, store it in an air-tight container. You can store it upto 2 weeks in a cool place.

Recipe Notes

  • Do not worry if the mix completely cools down and you are not able to make balls. Heat the pan again with the mix and stir for 2 minutes on low flame. Remove from the flame and start making balls again.
  • Adding rice is optional. It adds a nice crunch to the ladoos. 
  • You can adjust sweetness according to your taste.
