Aval Paal Payasam

Ingredients

  • Beaten Rice/Aval/Poha - 1/4 cup
  • Milk - 2 cups + 2tbsp
  • Sugar - 1/4 cup
  • Saffron strands - 6-8
  • Cashews - 8 broken
  • Raisin - 8
  • Ghee/Clarified Butter - 1 tsp
  • Cardamom - 2 powdered

Instructions

  1. Clean and soak beaten rice in some water for 10 minutes. Drain the water.

  2. Roast cashews and raisins in ghee till cashews turn light brown.
  3. Soak saffron strands in 2 tbsp warm milk.
  4. Boil 2 cups of milk in a heavy bottom pan. Once it starts boiling, add beaten rice and let it simmer for few minutes. Keep stirring.
  5. Now add sugar, soaked saffron strands and mix well. Let it simmer for 2 more minutes.
  6. Remove from flame, add powdered cardamom pods, roasted cashews and raisins. Serve warm.

Recipe Notes

Payasam will become thick once it cools down. You can add extra milk if you feel its too thick.
