Phirni / Rice Pudding

Ingredients

  • 2-3 tbsp Basmati rice - 1/4 cup
  • 2 cups Full cream Milk
  • 1/4 cup Sugar
  • 2 Green Cardamom
  • 8-10 Saffron strands
  • 2 tbsp Crushed pistachios for garnishing
  • condensed milk

Instructions

  1. Clean the rice and soak for 1 hour in some water. Drain the water and grind this rice.

  2. Soak the saffron strands in 2 tbsp warm milk.
  3. Heat milk in a thick bottomed pan when the milk starts boiling, lower the flame and add the grounded rice.
  4. Keep stirring and cook on a low flame. Do not cover the pan.
  5. Remove the outer layer of green cardamoms and powder it in a mortar and pestle.
  6. When the rice is almost cooked, add sugar, condensed milk and saffron.

  7. Stir and cook for 5 more minutes till it becomes creamy and thickens.
  8. Add cardamom powder and stir it. Transfer the content in a serving bowl and refrigerate.
  9. Garnish with some crushed pistachios before serving.
