Panjiri Recipe

Ingredients

  • 1 cup Atta / Whole wheat flour
  • 1/2 cup Brown Sugar
  • 10 Almonds
  • 15 pistachios
  • 15 cashews
  • 1 tbsp Edible Gum
  • 4 tbsp Ghee / clarified butter
  • 2 Green Cardamom

Instructions

  1. Heat 1 tbsp of ghee in a pan and roast almonds and pistachios on low flame for few minutes. Keep stirring. Remove from the flame and let it cool down completely.

  2. Roast cashews in the same pan on low flame till they turn light brown.  Remove from the flame and let it cool down completely.

  3. Roast edible gum in same till it pops and doubles the size. Remove from the flame and let it cool down completely.

  4. Add roasted almonds, pistachios, cashews, edible gum in your grind and blitz it to make a coarse powder.

  5. Grind sugar and cardamom to make a fine powder.
  6. Add remaining ghee and roast wheat flour on low flame till it starts leaving a nice aroma. After 8-10 minutes you will see the color changing. Keep stirring or the flour will easily burn.

  7. Remove the pan from the flame and add powdered sugar, coarsely powdered nuts and mix it well.

  8. Once panjiri completely cools down, store it in an air-tight container. You can store it for 3 months in a cool place.

Recipe Notes

You can also add roasted walnuts, musk melon seeds, foxtail nuts to make it even more healthier.
