Ingredients
Raw rice - 1 cups
Grated Amla/Nellikai/Gooseberry - 1/2 cup
Grated coconut – 1/4 cup
Mustard seeds – 1 tsp
Channa dal/Bengal Gram – 1 tbsp
Urad dal/white lentil – 2 tsp
Red chillies – 2
Green chillies -2finely chopped
Turmeric Powder - 1/4 tsp
Curry leaves – 1 sprig
Ginger finely chopped – 2 tspoptional
Asafoetida – 1/8 tsp
Peanuts - a fistful
salt to taste
vegetable oil - 1 tbsp
Instructions
Pressure cook rice with 2+1/4 cup of water. Spread the cooked rice in a plate a and keep it aside.
Heat oil in a pan and add mustard seeds and a pinch of asafoetida. When they crackle, add channa dal, urad dal, peanuts and roast till it becomes slightly brown.
Add red chilies, green chilies, ginger and curry leaves and sauté for a few seconds.
Lower the flame and add grated gooseberry, coconut, turmeric powder and saute for 2 minutes.
Add cooked rice and salt and mix gently.
Transfer it into a serving bowl and and serve it hot with some Raita and papadams.
