Sholeh Zard / Persian Saffron Rice Pudding

I’m sharing a recipe for a Persian dessert today called Sholeh Zard. Its a Persian Rice pudding which is rich in saffron and the rose water adds a nice aroma and flavour to this dessert. I had this dessert for the first time at my friends’ place who is from Iran and I’m in love with it. This dessert is also a great option for my vegan friends as it has no milk. This dessert tastes better when served cold. So, I usually refrigerate for 2 hours before serving. So, sharing a quick dessert with you all and hope you all try it out and share the feedback with me.

 

Persian Saffron Rice Pudding

A perian pudding made with flavours of saffron and rose water!
Ingredients
  • Rice – 1 cup
  • Water – 8 cups
  • Sugar – 2 cups
  • Saffron – 1 tsp
  • Rose water – 2 tbsp
  • Green Cardamom – 2 pods
  • Cinnamon – 1 tsp (powdered)
  • Almonds – few (broken and crushed)
Instructions
  1. Remove seeds from cardamom pods and crush it lightly.
  2. Clean and soak rice in some water for 30 minutes.
  3. Crush the saffron lightly and soak it in some warm water for 30 minutes.
  4. Cook rice along with 8 cups of water in a open pan on low flame for 20 minutes.
  5. Once the rice is mushy and soft, add sugar, saffron water and mix it well.
  6. Once it starts thickening, add rose water, crushed cardamom and mix it well.
  7. Remove from the flame and add crushed almonds and cinnamon for garnishing. Allow it to cool down and refrigerate for few hours. Serve it chilled.
Notes
I have used seeraga samba rice but you can use any type of white raw rice or even basmati rice.

    Rice pudding looks yummy. Usually they are made with milk or cream. This one is different.
