Aviyal – Kerala Curry Recipe

Aviyal is a very popular curry from state of Kerala, India. I’m sharing the recipe with a video. It is a healthy dish which is prepared with variety of vegetables and cooked in coconut gravy. If you love coconuts, you will definitely love this curry. Avial is also also an essential part of Onam Sadya meal. Sadya meal is served traditionally on a banana leaf during the harvest season in Kerala.

The preparation of this curry begins with chopping various vegetables in 3 inch length. These vegetables are then steamed and then cooked with a coconut gravy. You can either serve it with rice or Indian flat bread. So, sharing the recipe for Avial curry today.

Aviyal - Kerala Curry Recipe

Prep Time 10 minutes
Cook Time 15 minutes
Servings 4

Ingredients

  • 200 gm Yellow Pumpkin
  • 200 gm White pumpkin
  • 2 Drumstick
  • 2 Carrots
  • 1 Potato
  • 6 Beans
  • 200 gm Yam
  • 1 cup Freshly grated Coconut
  • 2 Green chillies
  • 1 cup Curd
  • 1/4 tsp Turmeric
  • 2 tbsp Coconut Oil
  • 1 sprig Curry Leaves
  • Salt to taste

Instructions

  1. Clean, peel and chop all the vegetables into 3 inches length. 

  2. Heat a pan and add all the vegetables along with 1/2 cup of water.

  3. Mix well and close the pan. Let it cook on low flame for few minutes till vegetables are soft and cooked.

  4. Grind the coconut with green chillies and curd to make a paste.

  5. Now add this paste into the pan.

  6. Add salt to taste and turmeric powder and mix well.

  7. Let it simmer for few more minutes.

  8. Heat coconut oil in a small frying pan and add curry leaves.

  9. Top the curry with this tempering, mix and enjoy.
