Vella aval is a traditional sweet from South India. This is mainly made with beaten rice and jaggery. It is specially made for festivals or auspicious occasions as an offering for God. So, sharing the recipe and hope you all have a wonderful day..
Beaten Rice/Aval/Poha – 1 cup
Grated Jaggery – 3/4 cup
Grated Coconut – 1/4 cup
Cardamom Powder – 1/2 tsp
Ghee – 1 tbsp
Wash beaten rice in a colander under fresh water for few minutes and keep it aside. Add 1/4 cup water in a heavy bottom pan and when the water starts boiling add grated jaggery and mix well. When it starts becoming thick add grated coconut and mix well. Now add beaten rice and keep stirring. When the rice soaks the jaggery completely add ghee and mix well. Switch off the gas stove and add cardamom powder and mix well.
Transfer the content into a bowl and serve it hot. You can garnish it with some roasted cashews and raisins.
